Step-by-Step Cooking Method

  1. Marinate the Meat:
    • In a large bowl, mix chicken/mutton with yogurt, red chili powder, turmeric, salt, biryani masala, and half of the fried onions.
    • Let it marinate for at least 1 hour (overnight for best flavor).
  2. Prepare the Rice:
    • Boil 6 cups of water with salt, lemon juice, and whole spices.
    • Add soaked rice and cook until it's 70% done (firm inside). Drain and set aside.
  3. Cook the Meat:
    • Heat oil and ghee in a large pan.
    • Add cumin seeds, whole spices, and green chilies.
    • Add ginger-garlic paste and sauté until golden brown.
    • Add tomatoes and cook until soft.
    • Add marinated meat and cook on medium heat until the meat is 80% done.
  4. Layering the Biryani:
    • In a heavy-bottomed pan, spread a layer of half-cooked rice.
    • Add a layer of the cooked meat mixture.
    • Sprinkle mint, coriander, saffron milk, and fried onions.
    • Repeat the layers and finish with rice on top.
  5. Dum Cooking (Sealing & Slow Cooking):
    • Seal the lid with dough or a tight-fitting cover.
    • Cook on a low flame for 20-25 minutes (or bake at 180°C for 25 minutes).
  6. Serve & Enjoy:

    Let it rest for 10 minutes, then gently mix and serve hot with raita or salan.
